Almond & Earl Grey Cupcakes

Unlike many women, I love salty foods more than I love sweet foods. But despite my lack of a sweet tooth, I do love to attempt bake. (I don’t really love baking. It’s too much work…and precision!)

This recipe was inspired by my eimi-chan when she made Earl Grey Cupcakes! My reaction to her cupcakes was – “I LOVE EARL GREY!!!!!” Earl Grey is definitely one of my go-to teas. (It’s always between Earl Grey, Jasmine Green or Almond Milk Green Tea).

Almond & Earl Grey Cupcakes
recipe adapted from Une-duex senses.
1/2 cup unsalted butter, at room temperature
1 cup of sugar
2 eggs
1 1/2 cups of flour
2 tbs. baking powder
1/2 tsp. salt
1/2 cup milk
1/4 tsp. almond extract
2 tbsp. of loose Earl Grey tea leaves (or 1.5 bags)

Preheat oven to 350 F. Fill a cupcake pan with liners. Beat the butter until creamy, then add the sugar and beat until fluffy. Add the eggs one at a time, making sure that they are incorporated thoroughly. In a bowl, combine the rest of the dry ingredients, including the tea leaves. Next, add half of the dry mixture. Add the milk then the remaining flour, stir until combined. Fill cupcake liners about 2/3 full. Bake for 15 – 20 minutes, rotating halfway to ensure even baking. Let cool completely before frosting.
the icing
2 cups confectioner sugar
1/4 cup butter
1/4 tsp almond extract
milk, enough to make preferred consistency (i used lactaid fat-free)

For the frosting, cream the butter until nice and smooth. Gradually add the powdered sugar. Next, add the almond extract, making sure it is well incorporated. Frost the cupcakes and enjoy!

Also, these came out extremely moist, but they didn’t rise as much as they should have. i double-checked my recipe, and i put in 2 tsp of baking powder instead of tbs!

Finally, I don’t use an electronic mixer because…I can’t afford one. But the icing and cupcakes still turn out fine! Though, if I had a blender/food processor I would probably opt to grind the earl grey in that because chopping it make the little tea leaves fly everywhere! Nevertheless, it worked out. I will definitely be making these again (with the correct measurements of baking powder!)
